quick veggie soup

  1. so easy, make shift, not a lot of time soup.....couple of brown mushrooms, sliced in a pot w/ a little olive oil,sautee until they begin to brown, about a 1/4 -1/2 cup of diced butternut squash, season a little every time you add more ingredients, a couple leaves of kale, chopped, a little red onion chopped, handful of spinach,sautee and season w/ each new ingredient and then one can of stewed tomatoes, add one can of water, keep seasoning.....I add some grated chipotle because I like it spicey....simmer until the sqaush is soft....tada!!! Use what ever is in the fringe, don't have squash, use a sweet potato, add peas, corn what ever you have....no cooking involved when you use the canned tomato
